The Vegan Burger

Last week I was craving a burger so bad. And I think it was because I’ve been watching too many videos of “what I eat in a day” on YouTube, which have become a must lately. I’ve been so inspired by them, and slowly but steady I’ve been gravitating into a more healthy and rich lifestyle.. 

I would like to say I’m vegan, but I’m not, nor I think I will ever be -at least for now. However, I’ve cut down most of my usual animal product intake and I think I’ve never felt this good for a while. Said so, I could say I’m kind of plant based/vegetarian usually but don’t have any problems on eating animal products from time to time. Also, just to clarify, as I’m living on my own I find it easier to maintain this lifestyle than when I live home. I love cooking, but I could never say no to something my mum cooked. Never.

Back to the burger, I will tell you a literal conversation between me and my sister. She:” What are you having for lunch today”, me “Oh, you know just a casual vegan sweet potato burger”. She replied with a “why don’t you do this at home! I hate you” and that’s how I decided to share the recipe with you all. I found the recipe on YouTube but decided to experiment a little bit, with great results. I was so impressed because it was sooo delish, and it also looked good -not saying this because I cooked it myself.

You will need (makes four servings)

A large sweet potato, 150g of oyster mushrooms, half an onion, bread crumbs, salt, oregano, olive oil 

To accompany  

One small tomato, hummus, a bun 

Boil the sweet potato until soft. I pealed it before so it was easier, also I didn’t realize about this but it will cook faster if you cut it in pieces instead of boiling the whole potato. Meanwhile, chop the onion and sauté it with some water (or olive oil). When the onion is almost clear, add the chopped mushrooms to the pan. This will only take a few minutes as the mushrooms cook really fast. When ready leave it cool for some minutes.

Whenever the potato is ready drain it and let cool. After this, mix the potato with the mushrooms and add the bread crumbs, salt and oregano to taste. Make small balls and let them chill on the fridge for one hour. After this time, heat a pan, add a bit of olive oil and fry the burgers.

At the same time, open the bun and toast it. Then spread some hummus and add the sliced tomato. When the burger has a nice brown colour put it on the bun, and it’s ready to eat!  You will gain friends with this burger, I promise you.
